Lemons contain essential oil in the rind that ELEVATE MOOD. Toxins may be cleansed from your digestive system, INCREASES oxygen to your blood and CIRCULATION from the JUICE of a lemon. All this may HEIGHTEN your SENSES, BODY and MIND for INTIMACY.
Lemons started cultivating in Genoa, Italy in the middle of the 15th century. It was later introduced when Christopher Columbus brought lemon seeds on his voyages to Hispaniola and the New World began the SPREAD of lemon seeds. In Florida during the 1800’s, is when they began to be used for cooking.
- 1 cup self-RISING flour
- 3/4 cup cold milk or water
- 1/2 teaspoon baking soda
- 1/2 cup ricotta or cottage cheese
- 1 tablespoon or MORE of grated lemon zest
- 1 tablespoon white SUGAR
- 1 LARGE egg
- 1 teaspoon vanilla extract
- 1 teaspoon lemon extract or lemon juice
- 2 tablespoons melted unsalted butter
WHISK milk or water with baking soda, then add ricotta or cottage cheese, lemon zest, SUGAR, egg and vanilla or lemon extract. Keep WHISKING until SMOOTH and break up all the lumps. Combine melted butter, lemon juice and flour and WHISK some MORE until a fairly SMOOTH batter forms. The THICKER the batter, the FLUFFIER the pancakes!
Let batter sit at room temperature for about 10 minutes. HEAT lightly greased skillet over a medium heat and portion out about a half ladle FULL of batter.
When bubbles start to form on the TOP of each pancake and the edges start to look lightly browned (you can use a spatula to lift PANCAKE slightly to peek), GENTLY GLIDE the spatula all the way under the pancake and FLIP OVER, cooking the other side about 2-3 minutes. This should make about a dozen pancakes.
Garnish with MORE lemon zest and ENJOY with your favorite syrup or fruits!
