This crunchy, MESSY breakfast is so FUN to make and DELICIOUS! You can prepare them with any type of eggs you and your partner prefer and remember to always have FUN EXPERIMENTING with different toppings and SAUCES!
FUN FACT: Tostadas are traditionally a flat or bowl shaped tortilla. More than 2,000 years ago, they were made from leftover tortillas that were not FRESH enough to fold but definitely DELICIOUS to EAT!
Scrambled Eggs & Salsa
- 6 scrambled eggs
- 1/4 cup salsa
- 1/2 cup shredded cheddar cheese
- HANDFUL chopped fresh spinach
- teaspoon butter or cooking spray
- tostadas
- HANDFUL chopped cilantro
- Queso Blanco (white cheese), crumbled
Heat sauce pan or griddle with butter or spray. Scramble eggs, add cheese and salsa and whisk. Pour into HOT pan and add spinach.
Keep moving eggs around in a scraping, TURNING and FLIPPING motion so they don’t stick. Cook for about 5-10 minutes. You will see they will start to COME TOGETHER and not be so WET.
SPOON a good HELPING ON TOP of tostada, sprinkle with white cheese, cilantro and SALSA and EAT!
