This Lebanese salad will be your go to this summer! It contains lots of parsley which is a powerful antioxidant and contains more Vitamin C than citrus fruits. Parsley also limits inflammatory processes and eliminates bad breath which is essential for foreplay and ensures smooth transitions of blood flow into the genitals.
Bulgar is a good source of magnesium which allows proper functioning of the brain and nerves.
Bountiful Bulgar Wheat Salad
~1 cup bulgar cracked wheat or you may use quinoa
~1 cup diced cucumber
~ 1 cup diced tomatoes
~ 2 teaspoons or more fine sea salt
~ 3 bunches fresh curly parsley
~ handful chopped fresh mint
~ 2 scallions, finely chopped
~ 1 garlic clove minced
~ 1/4 cup or more extra-virgin olive oil
~ 3-4 tablespoons to taste
The key to this salad is to chop everything really fine. The parsley and mint can be chopped in a blender.
First, chop the cucumbers and tomatoes and place in a strainer with one teaspoon of salt allowing excess liquid to drain.
Cook the bulgar according to package direction, drain excess water and set aside to cool.
Finely chop the parsley by hand or in blender or food processor. Once removed, place in bowl with cool bulgar and add mint and scallions.
Chop one clove garlic, add olive oil, lemon juice and remaining salt and whisk.
Pour into salad, combining all ingredients and stir. Taste and add more salt, olive oil or lemon juice if desired.
