Bang Bang Shrimp & Veggie Wraps
The name Bang Bang Shrimp originated as a Thai dish that came from Thai sweet chili sauce. It usually is served to envelop delicate fried shrimp, but you can use it as a dip or drizzle on top. It doesn’t have to be overly spicy but possibly have enough of a kick to keep things interesting.
~ 1 package of flour tortillas (8-10)
~2 lbs. large shrimp, cleaned and deveined
~ 1 large bunch bok choy, cleaned and sliced into about 1/2 inch pieces
~ 1 red bell pepper, sliced thin
~ 1/2 red onion, sliced thin
~ 1 can whole kernel corn, drain water
~ 3 scallions thin sliced on a diagonal
~ Handful of chopped cilantro
~ 1 cup bread crumbs
~ 1 cup fish fry mix
~ 3 eggs, beaten
~ Sesame oil
~ Soy sauce
~ Terriyaki sauce
~ 3 cloves garlic, chopped
~ Vegetable oil
First, clean the shrimp, pat dry and mix in the eggs. Then, cover each one with the bread crumb and fish fry mix. Place on a platter in one layer. You can refrigerate them once breaded while you prepare the remaining.
Saute garlic to a lightly browned color in two tablespoons sesame oil, then throw in bok choy and cook until softened. Remove and add pepper, onion, scallions and corn with two more tablespoons sesame oil and cook through. Set all this aside with cilantro.
In a large skillet, add enough vegetable oil to cover bottom of pan about 1/2 inch deep. Once hot, gently place shrimp in to fry, but do not crowd them. Once the edges start to brown, flip over once and cook other side approximately three minutes on each.
To prepare each wrap, insert one tablespoon bok choy, veggie mixture, about 4 shrimp, a sprig of cilantro and a drizzle of the Bang Bang Hot Sauce . You can either roll it into thirds or in half.
Bang Bang Hot Sauce
~ 2 tablespoons Sriracha
~ 1 cup mayonnaise
~ 1 tablespoon chili garlic sauce
~ 4 tablespoons honey
Mix together and refrigerate. If you like more heat, then add more Sriracha. If you like it a little more sweet, add more honey. This sauce is perfect with this recipe, but can be used on meat, chicken or veggie recipes as well!
