Pappardelle with Citrusy Shrimp
A strong feeling of wanting to have someone or something is a main desire.
Pappardelle or to “eat hungrily” are a flat ribbon shaped pasta that taste light but fill you up! Paired with shrimp in a citrus based sauce, this is a delicious, hearty and healthy meal anytime!
~ 2 lbs. shrimp, peeled/deveined
~ 2 lbs. egg Pappardelle pasta
~ 2 oranges
~ 2 lemons
~ 1 red onion, sliced fine
~ 1 tbsp. Red pepper flakes – depending how hot you desire
~ handful of fresh parsley, save half for garnish
~ 4-5 grinds of Himalayan pink salt
~ Olive oil
Whisk all ingredients in a bowl except shrimp and pasta.
Once cleaned, marinate shrimp in juice of one orange and one lemon and refrigerate.
Boil water to prepare for pasta. About half way through cooking, add olive oil enough to coat frying pan lightly, get it hot, and sauté ingredients in large skillet.
Once onion starts to soften, add shrimp and sauté till pink. This is how you know they’re cooked! This is where I gage how juicy I want this meal, so you may squeeze a little more oranges or lemons in the pan!
Once pasta is cooked and al dente or “FIRM to the tooth” or however FIRM you prefer your pasta, strain water, reserving about 1/2 cup and add to shrimp mixture.
Place pasta on platter, drizzle with olive oil and add shrimp mixture. Toss gently to coat pasta and sprinkle the rest of the parsley on top!
