Breakfast “Cupcakes”
These little “bird nests” are a perfect little bite or nibble of egg, bacon, cheddar cheese and hash browns for breakfast in bed or brunch!
~ bag of frozen hash browns
~ 12 eggs
~ one pound bacon
~ shredded cheddar cheese
~ everything bagel seasoning and scallions, optional but recommended
Place hash browns in a muffin tin covering bottom and sides, leaving a space in the middle where you will later fill with egg. Bake on 350 degrees for about 20-30 minutes or until crisp and golden. Remove from oven.
In the meantime, cook bacon until crisp and chop into small pieces. Crack one egg into each muffin spot then add bacon and cheddar. Cook for another 20 minutes or until eggs are cooked to desired consistency. Sprinkle with everything bagel seasoning or spices of your choice and enjoy!
