~ 4 eggs
~ 1 cup water
~ 1 cup all purpose flour
~ 1 stick margarine
Filling
~ 1 cup milk
~ 1 pint heavy cream
~ 2 teaspoons vanilla extract or any flavor you desire
~ 1 box of any flavor instant pudding you desire
*Make the filling ahead of time and keep cold in fridge.*
Preheat oven to 325 degrees. Boil margarine in water until melted then remove from heat. Add flour and incorporate well. Crack one egg in at a time, beating after each one until blended. Do not add them all at once! (This is important for the puff to become puffy!) On a greased cookie sheet, scoop a teaspoon size of the mixture a couple inches apart for each puff. Bake at 325 degrees for 15 minutes, just enough time for a quickie, and then 425 degrees for another 15 minutes, just enough time for another quickie! Remove and cool!
Using a hand mixer, whip heavy cream, adding a little extract at a time. Whip until thick and creamy. You can use this as a fresh whipped cream for any dessert too! Make the instant pudding as directed on box, let cool and add both together. Slice puffs in half and fill with pudding when all is cool. Sprinkle with confectionary sugar and enjoy the creamy goodness!
