Brown & Red Lentils
- 1/2 bag brown lentils, rinsed in water
- 1/2 bag red lentils, rinsed in water
- 2 cloves garlic, chopped
- 1 shallot, chopped
- 1 packet chicken broth
- 3 cups water
- 1 cup red sauce (see my sauce in “Dripping with Sauce”)
- 4 carrots, cleaned and chopped
- ground black pepper
- 1/4 teaspoon tumeric
- 1/4 teaspoon oregano
- 1/4 cup olive oil
Saute garlic and shallot in olive oil until SOFT. Add lentils and carrots and mix through, then pour in water and chicken broth. Sprinkle in pepper, turmeric and oregano. Cook on medium to low HEAT until lentils become SOFT but not mushy. This should take about 30 minutes.
Next, add SAUCE and cook to HEAT through. If consistency seems too THICK, you may add MORE SAUCE to make it into a soup and serve with small pasta. Lentils are DELICIOUS served over rice, in a cold salt, or even alone.
