Farro is used widely in Tuscany, Italy. The secret is out that Farro can promote longevity!
This soup is so hearty that it warms you down to your soul.
Tuscan Farro Soup
~ 1 lb. bag Farro
~ 3 cups water
~ 1 can Goya garbanzo beans
~ Handful fresh spinach chopped
~ 1 packet chicken bouillon
~ 1 cup tomato sauce (see my recipe “Mambo Italiano”)
~ 6 cloves garlic
~ 1/2 onion, chopped
~ 3 tablespoons Olive oil
Sauté chopped garlic and onion in olive oil until soft and golden. Add all ingredients except spinach.
Cook until Farro softens about 45 minutes, then add spinach when almost done! You may need to add more water depending on how soupy you prefer it!
You may also add shredded chicken to this dish for some extra protein!
