Avocado & Eggs on Naan
- 4 LARGE eggs or MORE
- One red and one green bell pepper
- 2 LARGE Naan breads
- 1-2 RIPE avocados
- SPICE such as an everything bagel blend, salt, black pepper or red pepper flakes
- salsa
Place pepper on their sides and slice into 1/2 inch round pieces. You will probably have about 4-5 for each pepper.
Spray bottom of skillet with cooking spray oil and cook peppers on both sides until softened and lightly browned.
While the peppers cook, cut the avocado LENGTHWISE and REMOVE the pit. SPOON out the avocado and sprinkle with salt.
Crack an egg into middle of pepper and place naan INTO toaster oven.
Once naan is WARM or toasted to your liking, SPREAD ON avocado, then CAREFULLY use a spatula to LIFT pepper and egg together and place ONTO avocado. Sprinkle with SPICES and serve with salsa if DESIRED.
