Grits with Bacon & Grilled Shrimp
- 1 pound cooked bacon
- 1 cup grits
- 3 scallions/green onions
- 1 1/2 cup vegetable or chicken stock
- 1 1/2 cup milk
- 1 1/2 cups cheddar cheese
In a medium saucepan, add the grits, chicken broth, milk, and salt, and STIR to combine. Cover and cook for approximately 30 minutes and STIR the grits a few times. If you need MORE liquid toward the end of the cooking time, STIR IN a little broth or milk. When the grits are done, STIR IN the bacon and cheese.
- 1 1/2 pounds LARGE shrimp, peeled & deveined
- 1/2 cup unsalted butter
- 2 tablespoons extra VIRGIN olive oil
- 4 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon thyme
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon freshly ground black pepper
- Pinch of cayenne pepper
- 2 tablespoons Worcestershire sauce
- 1/4 cup fresh lemon JUICE
- 1/4 cup chopped fresh parsley
MELT the butter in a large skillet with the olive oil over medium heat and then cook the garlic until golden BROWN. Continue to add the Worcestershire SAUCE and lemon JUICE and simmer for one minute. Finally, add the shrimp and cook, stirring until they turn completely PINK .
Transfer grits to a platter or individual bowls and TOP with the shrimp and crispy bacon. Garnish with the parsley before serving.
