Cool Lime Yogurt Pie
Limes are high in acidity and can neutralize dangerous bacteria found in foods which have been stored incorrectly. Some studies clearly show that lime juice has a powerful and healthy effect on our immune systems. The Merchant Shipping Act of 1867 required all ships of the Royal Navy and Merchant Navy to provide one pound of limes daily for sailors to ingest to prevent scurvy which was a deficiency of Vitamin C.
- 1 1/2 cups crushed graham crackers
- 1/2 cup melted butter
- 8 ounce whipped cream cheese
- 3/4 cup confectioners sugar
- One tub cool whip
- three containers of 5 ounce lime yogurt
- 2-3 drops green food coloring (optional)
- One fresh lime and zest
Crush graham crackers and combine with butter then layer bottom of a pie plate.
Whip cream cheese and slowly pour confectioners sugar in and mix.
Add about 4 tablespoons cool whip, reserving the rest for later and food coloring if desired then blend.
Spread yogurt mixture evenly covering graham cracker crust. Top with remaining cool whip and lime zest.
Refrigerate until ready to eat. You may also freeze this and take out about 30 minutes before serving for a luscious, citrusy, cool and refreshing summer dessert!
